A popular perennial herb that easily grows from seed is Spearmint. Mentha spicata reaches 12 - 36 inches in height, and it can spread indefinitely. Confining it to a container is recommended if you want to control the amount of spread. Spearmint has spikes of pink colored flowers that appear in early summer. The foliage is highly aromatic with lance-shaped leaves that have a wrinkly texture. Spearmint is used in cooking, in teas, and potpourri. Harvest the leaves when the plant reaches 12 inches in height. Hang bunches of leaves upside-down in a dark, well-ventilated warm place. Leaves can also be frozen as well. Start Spearmint directly outdoors after danger of frost has passed. Press the seed into the soil, cover it with 1/8 inch of soil and keep it moist. With a temperature of 60 - 70F, germination is usually in 21 days. Spearmint prefers full sun to partial shade and moist, well-drained soil. Space the plants 18 inches apart.
